Horseback riding is expensive.
I used to do it but with lessons. $45 per person if it wasn't private but that was teaching so yeah...

Wow. o_O Was only $15 per lesson at the stable I used to ride at. Did you do English or Western? I say "only" $15, but that's still quite costly. That's why I quit.

For $15, I can buy a toy horse and pretend to be horseback riding any time I want.

Alright, clothes have already been mentioned, and you vetoed jewelry and flowers.
You're eloquent, right? Write her something about how much she means to you. Not a love letter, just something to let her know how special she is. And put that in with the clothing or whatnot else you want to give her.

I ride english, it was also Canadain but that's still a good price. She was a private instructor who travelled to different barns. A lot better than taking lessons somewhere who hires there own instructors and makes a bisneous out of it.
