okay, if i'm a busy college student and still find time to make these, then you can too. not to mention they're super easy! i like to make empanadas with several different kinds of fillings like picadillo (ground beef with potatoes) or fruit and sugar. This is one of my vegetarian friendly versions.
Black bean and feta cheese empanadas. 1 can Pillbury Grands Biscuits 1 to 2 cans black beans, drained and rinsed - should be as dry as possible as much feta cheese as you like spices - it's really all about what you like (the basic salt (although i like to use seasoned salt) and black pepper, a pinch of cayenne, a dash of garlic salt and few dashes of cumin)
1. Mix black beans, feta, and spices together in a mixing bowl. Set aside.
2. Open can of biscuits and separate them. Using a rolling pin, flatten each biscuit to make a larger round disk (probably about 3 inches in diameter). (Frequently, i'll put the biscuits between pieces of wax paper to make this whole step go faster - less sticking and less mess.)
3. Put two teaspoons of blackbean-feta mix into center of each biscuit disk, and close disk into half moon shape by folding top half of dough over. You might need an egg wash to keep dough sticking closed. Anymore than two tspns and you're going to have filling falling out while baking.
4. Bake empanadas according to directions on biscuit container, usually about 13 minutes at 350 degrees F.

Alright, My boyfriend is a red seal cook and Ive been cooking since i was like 7(My mom is a cook as well). So I'll be sharing some recipes along the way wink . But for now this is a DESERT recipe that is always a hit at partys and my diabetic friend ALWAYS wants when Shes depressed and wants to cheat a bit.
Chocolate Ambrosia
bake a chocolate cake(The cake mixes are fine and makes it ALOT easier) and let it cool. Once its cool break it into crumbs in a large bowl.
Make some pudding(Once again mix is more than fine enough and ALOT easier)
Get 2 skor bars and grate the chocolate off of them in a seperate bowl. Use the hard candy part and put it in a bag. Then crush it into crumbs. You can also use a food processor but i love the old fashion way. BANG with a roller lol.
Mix in the candy skor into the pudding. Then pour the pudding and skor on top of the chocolate cake.
Make whipped cream(Do NOT used the can one because it turns into water, it has to be powdered mix) Then put in as much as you want. I dont like whipped cream so i put in a 1 inch layer. But you can put more.Its all up to taste. Once that is done sprinkle the chocolate you grated over the whipped cream. Cover and put in the fridge overnight. Then serve.
It is DELICIOUS. and deffinetly worthy to be food of the gods(A.k.A Ambrosia)
note: In my serving(In a plate)I like to mix it up untill it looks like mud so all the flavors are mixed together. It doesent look as good presentation wise but its real yummy.

I stink at cooking, I've burnt water (yes it's possible to do that!) before. I make my own dinner most of the time, I'll be bookmarking this thread for future reference when I don't know what to make. I like making things that don't involve using a oven. I had a bad experience with one when I was younger (still have a mark next to my belly button). But I love Panda Express's Chow Mein. If there's a Panda Express by your house, you need to go there! But.. hmm... let's see if I can find any of Mom's cookbooks...
FoUnD OnE! My fave dinner, your kids can help make it or make it on there own. This can also be eaten as a lunch or snack, I dunno about a using it as a breakfast, though...
Inside-Out Turkey Sandwiches (funky name, eh?)
What you'll need: 2 tablespoons cream cheese 2 tablespoons pasturized process cheese spread 2 teaspoons chopped green onion tops 1 teaspoon prepared mustard 12 thin round slices turkey breast or smoked turkey breast 4 large pretzel logs or unsalted breadsticks
How to make it:
1) Combine cream cheese, process cheese spread, green onion and mustard in small bowl, mix well.
2) Arrange 3 turkey slices on large sheet of plastic wrap, overlapping slices in center. Spread 1/4 of cream cheese mixure evenly onto turkey lices, covering slices completely. Place 1 pretzel at bottom edge of turkey slices; roll up turkey around pretzel. (Be sure to keep all 3 turkey slices together as you roll them around the pretzel.)
3) Repeat with remaining ingredients.
Note: makes 4 servings, they can be messy if you hold them the wrong way. I'm still trying to figure out the right way to hold them, and I've been eating them for, oh, about 5 years.

menewme Lord Yugo Fox Since I joined this guild a long time ago and haven't made any posts (that I recall) because I’ve been busy, let me make up for it with one of my homestyle ramen recipes. I'm a ramen junkie and I’ve invented all kinds. My original Thai-lime ramen recipe (my best work I think) ish real time consuming so here’s one for a quick fix. This is directed towards witchcraft by the way and any others who asked for ramen. Note - serves one hungry peep. Ingredients-water -pan or skillet -deep bowl -pot -1 ramen packet, pork or pork bone flavored -crushed chill peppers , add to your taste. (spiceh) or - 1 - 3 Green Chili peppers , finely chopped and raw (spiceh SpIcEh!) or both (SPICEH!) -1 packet of beef jerky (roast pork, traditionally the meat in ramen is very time consuming.) or a shrimp ring, but you have to de-tail them. -4-8 pieces or Okra (ask at your local supermarket). -1 onion - Sliced Kamaboko Fish Loaf (naruto) (ask at your local Japanese supermarket) Sliced Kamaboko (Naruto) isn't necessary; it’s just a traditional sliced fish loaf in ramen. Yes it has some connection to naruto uzumaki, the ninja, cause he eats it all the time in ramen. -1 average egg. instructions-First open the packet of noodles (should be in a square shaped conglomerate) in a deep bowl or basin (ceramic, NOT metal.) and evenly sprinkle the pork flavouring onto it. -Wash the okra. -In a pot of water, put in the egg to boil, on high heat. -To get instant ramen noodles well absorbed into the broth, the secret is to use your kettle, boiling 800 ML or water. --When the kettle is done, pour --500 ML-- of the water into the deep bowl with the noodles in it, and close it up with a plate so that heat doesn’t escape. This will heat the noodles perfectly and develop a good broth.-- -While the water in your kettle is boiling, put some oil an the skillet or pan (olive) On medium heat. -If you have Kamaboko get some slices out. -when the oil is hot put the okra on, mixing with some onion and some of the chili peppers. Sautee for approx 3 - 7 mins or until the insides are soft but its firm altogether. -Take the full boiled egg off and crack it, and slice it in half, horizontally. -Now wait till the noodles are ready (firm to your likings) and first put as much spice (Crushed chili, green chili, or both) as you want in it. On the bed of noodles arrange the okra, the beef jerky pieces or shrimp, the naruto if you have it, and the two halves of the egg. There you have it. A delicious ramen meal. ENJOY! what it looks like with pork, no jerky, and no naruto. - I have no name for this recipe of mine, have any ideas guys? Wow that looked delicious! call it Ramenicious! biggrin Great Idea! Ramenicious. sounds so delectable. I just want to swallow it.

This is very easy to make. It's egg and cheese cassadilla. You just need any kind of tortilla, egg and shredded cheese. Make scramble egg. Put the tortilla in a pan, put the cheese and and the scramble egg in and fold the tortilla in half. It's a quick and tasty breakfast!

Hmm... The other week I made Stuffed Peppers.
Can't remember the exact recipe off the top of my head, but I'll give it a shot. I made it for my boyfriend and myself. So, you can always double up, etc for more.
Ingredients .2 Large-ish peppers (easier if they can stand upright on a flat surface) .1 Handful of rice .Enough mincemeat to stuff your peppers .A little melted butter (for basting)
Instructions .Preheat oven to 350 degrees F (175 degrees C).
.Boil the rice according to the instructions on the packet, making sure to stir occasionally as to not let the rice stick to the inside of the pot. Make sure to season with a little salt.
.During the time that the rice is cooking you can prepare your peppers. Slice off the tops and put them aside (You can then place it back on after you've stuffed them for effect). Remove the core and seeds, making sure they are completely empty. We need to make our peppers stand, so if they can't do so on their own, slice a little off the bottom to help them stay upright. Place them on a baking tray (I generally cover the tray in tinfoil).
.About 5 minutes before the rice is ready, brown the mincemeat in a frying pan.
.Drain the rice and add it to the mincemeat.
.Once this has all browned nicely, put a little of the mixture into each pepper. Press it into the sides to get more in. Fill completely to the brim and then place the top back on.
.Put them into the oven for an hour (mine actually took a little less, it's all about personal preference). Basting with a little melted butter every 15 minutes, to keep them moist and succulent.

Cheesy Chicken and Pasta
I made this last night for my bf and me, with Square Potatoes (recipe below) as a side. The pasta gave us each 2 ginormous servings and then one normal serving, so that'd be probably around 7 normal servings.
1 12-oz. package of rotelle noodles 1 can of cream-of-mushroom soup (it was the normal Campbell's size, not family-size; you can use family-size for more sauce or if you're doubling the recipe. Also, if you don't like shrooms, you can use cream-of-chicken, or probably any other cream soup.) milk (enough to fit in the soup can) 1 pound of boneless, skinless chicken breasts 4 tablespoons of butter or margarine seasonings like garlic, rosemary, basil...whatever you want and whatever goes good with chicken 1/2 cup grated cheese (original recipe called for Parmesan; I used Colby Jack)
1. Put water on to boil for the noodles and cook them according to package directions. Prepare and cook the chicken while the noodles are cooking (keep reading - the steps for preparing the chicken are below). 2. Rinse chicken breasts in cold water and pat dry with a paper towel. Trim off any and all fat. Cut chicken into small pieces, about 1/2 an inch cubes. 3. Melt the butter in a skillet. Turn heat to high and sautee chicken, turning and stirring often. Now is also the time to season your chicken. It will only take a couple of minutes for the chicken to cook. If you're unsure about whether the chicken is cooked through or not, cut one of the larger pieces into two. If it's white all the way through, then it's cooked. 4. Dump in your soup. Fill the now-empty can with milk and pour that in too. Stir well. 5. Bring the sauce to a boil. Put in the cheese, stir, then taste the sauce; if it's not cheesy enough, put in more cheese. 6. Set aside to thicken. Serve over pasta.
For the sauce, I altered a recipe to fit what I had in my cupboard - it originally called for a cream sauce, but...a) I didn't have any heavy cream, and b) last time I made this, I had the heat up a little too high and my sauce curdled from the heat. whee Using cream-of soup as a substitute for cream sauce was easier and less expensive for me. ^.^
Square Potatoes I used three good-sized potatoes for my bf and me, and it wasn't quite enough for us. So, if you're cooking for a big eater and/or someone who likes potatoes, fries, or Jojos, then prepare more potatoes.
1 medium-sized potato per person, at least butter or margarine seasonings like garlic, seasoned salt, and pepper
1. Preheat oven to 350 degrees. 2. Wash potatoes and cut into small chunks - about the size of 1/2 inch cubes. 3. Place cut potatoes in one layer on a baking sheet. 4. Put enough butter in places on the sheet so that the potatoes won't burn. (I ended up using approximately half a cube of margarine, placed at the corners, sides, and one bit in the middle of the sheet.) 5. Season potatoes. 6. Bake for 30 minutes, stir, and bake for 30 minutes more.
You can make baked fries and JoJos the same way, but you just cut the potatoes differently.
