...What defines sexuality? Is it the physical attraction, the emotional-eros attraction, a combination of both, or is it something else?
Where this question popped up... well... *sings "I kissed a girl and I liked it.."* Not really that though... but the thought is odd.

A combination of one's sex, gender, sexual preference, preference for emotional companionship, physical attraction, and some sort of chemistry.
The thought of kissing a girl is odd, or you've been thinking about kissing girls and you find it odd or...?

I'm not sure. My sexuality has always been fluid, though always at a male slant. Actually I've only felt strong emotional-eros attraction to guys, though there are a few girls that I would feel really strongly about, but only at around the filios level of emotional thought.
Edit: Physical, however, gets really confusing sometimes.

Well it should come down to when you were in you first in your teens you should have found one gender more appealing physically then the other...in the pants...

I think sexuality is fluid for a lot of people, but having a "male slant" can make you more aware of the fact (or a female slant, if you're a girl), since your preferences already lie outside what's typical.
I've been in relationships with girls, and they weren't horrible, or even bad. I have even been head-over-heels for a girl I worked with. Bit confusing at the time. I don't identify as bisexual, though.
Sexuality is what you make of it. Obviously there're tons of facets, but mostly it's just how you identify personally.
Mugen: Or earlier than that. Or later than that. =/ And some people don't have a preference, and like both sexes. And then there are people for whom gender means nothing. Look up pansexual.

It's a bit strange though sometimes.
I know that I can have a physical attraction for a girl, but the thing is my emotional responses would never align with that, and it's bothering me. Perhaps it's just lust and not true love, then, but it is troublesome.
