emm.. fried rice x] its an asean food heart it serves 4 to 6 ppl and very ez to make one 3nodding
This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.
Ingredients:
* 1 - 2 green onions, as desired * 2 large eggs * 1 teaspoon salt * Pepper to taste * 4 tablespoons oil for stir-frying, or as needed * 4 cups cold cooked rice * 1 - 2 tablespoons light soy sauce or oyster sauce, as desired
Preparation: Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.
Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.
When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

Farmer's Market Vegetarian Quesadillas
INGREDIENTS ^^ 75 g chopped red bell pepper 60 g chopped zucchini 65 g chopped yellow squash 85 g chopped red onion 35 g chopped mushrooms 15 ml olive oil cooking spray 6 (9 inch) whole wheat tortillas 110 g shredded reduced-fat sharp Cheddar cheese
DIRECTIONS In a large nonstick pan, cook red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan. Coat the same pan with cooking spray, and place one tortilla in pan. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer 3/4 cup of the vegetable mixture over the cheese. Sprinkle another 1/8 cup of cheese on the vegetables, and top with a second tortilla. Cook until golden on both sides, for approximately 2 to 3 minutes per side. Remove quesadilla from pan, and repeat with remaining ingredients. Cut each quesadilla into 8 triangles with a pizza cutter. Serve hot.
I'm a vegetarian so I don't know if you will actually make this but it is really good. This is from a book that I have ^^

Guacamole
Ingredients Avocado (s)
Optional Ingredients Lime juice (yesterday I just used a wedge of lime) Cilantro Onion Chili peppers tomatos salsa Anything else you want (I usually like lime juice and cilantro and i serve the guacamole with salsa... yesterday i used finely chopped onions too and it worked well)
So, Guacamole is mostly just mashed up avacado (pretty simple, right)
Basically you take a ripe avocado, cut it in half and remove the pit and mash it up in a bowl with whatever optional ingredients you like. The only really important thing is to chop/mash the optional ingredients up very finely so they can be well distributed before adding the avocado. When mashing the avocado, use a fork and try to mix the other ingredients in as you mash it- you want the guacamole to be mostly smooth/ well mashed but still have little chunks of avocado so it is important not to overmash.
lime/citrus juice is good because it helps keep the guacamole from turning brown too quickly. I've heard putting the avacodo pit back into the guacamole also does this too though

This recipe was made by my room mate and best friend chris i rattle about.. he's a god in the kitchen xD. everyone in towns demanded this recipe and are nuts about these. took them by the hair salon other day and they were cut into tiny pieces because customers all day were fighting over them. he had to make a bunch of copies of the recipe...
seriously. try these out. you can make the recipe your own. everyone loves making them their own way. with their own favorite dried fruits and nuts. sooo much better than storebought and you can make them healthy or as unhealthy as you like..
Home Made Granola Bars (adapted from a recipe by Ina Garten)
2 cups original oats, heaping------1/4 cup light brown sugar (packed) 1 cup sliced almonds---------------1 cup shredded sweet coconut (packed) 1/2 cup whole almonds (raw)----2 tsp vanilla extract 1/2 cup wheat germ (or 2/3)-----2 cups chopped dates, dried, pited 1/4 cup flax seeds------------------1/2 cup raisins 4 tblsp salted butter---------------1/2 cup dried cranberries 3/4 cup honey----------------------1/2 cup chopped dried apricots
Butter 8x12 metal baking dish, line with parchment paper. Toast wheat germ at 350 degrees for 5 minutes. Combine oats, nuts, coconut, flax seeds and spread on baking sheet. Toast at 350 degrees for 10-12 minutes. Combine with wheat germ in a large mixing bowl. Melt butter in small saucepan. Add brown sugar, honey, salt and vanilla until it boils. Simmer for 1-2 minutes and remove from heat to settle. Mix into dry ingredients until covered. Add dried fruits and mix. Press into baking dish with wet fingers. Bake at 300 degrees for 25 to 30 minutes. Let stand for at least 3 hours. Cut and serve, making 12-16 bars.
*For crunchy granola bars, refridgerate for 45 minutes prior to serving. Be sure to cut the bars before you put them in the fridge, they're too hard to cut afterwards.
*Granola bars are still quite good if you can't wait the 3 hours to eat them. If you at least do the 45 minutes in fridge this will speed that up.
(I've been too hungry smelling them cooking and eaten them minutes after they come out of oven and they're still fantastic. some may like them better this way. The ingredients fully distribute when left to sit for 3 hours at least and a bit in the fridge after cutting. So if you want a perfect recipe try waiting the 3 hours and refridgerate a few before taking them to friends and family.)
