*tosses 5 mint leaves in a tall mixer glass, adds a touch of sugar and a splash of soda water, quickly grinding the mint and sugar until the syrupy liquid smells strongly of mint. Squeezing a lime into the glass and tops it with rum before shaking it all over ice. Pouring the chilled drink into a highball glass toping with soda water and a sprig of mint for garnish*
