This is one of the best pastas you'll ever have!
Pesto Cream Sauce
1 (16 ounce) package linguine pasta 2 tablespoons olive oil 1 small onion, chopped 8 cloves garlic, sliced 1/2 cup butter 2 tablespoons all-purpose flour 2 cups milk 1 pinch salt 1 pinch pepper 1 1/2 cups grated Romano cheese 1 cup prepared basil pesto 1 pound cooked shrimp, peeled and deveined 20 mushrooms, chopped 3 roma (plum) tomato, diced
1.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2.Heat olive oil in a large skillet over medium heat. Saute onion until tender and translucent. Stir in garlic and butter, and saute until garlic is soft and fragrant, about 1 minute. Dissolve flour in milk, then stir in. Season with salt and pepper, and simmer 4 minutes, stirring constantly. Add cheese, and stir until melted. Stir in pesto. Add shrimp, mushrooms and tomatoes. Cook 4 minutes, or until heated through. Toss with pasta until evenly coated.

Tigerlily1029 I'm probably going out to dinner tonight. A really easy one I know is enchilada casserole, but I don't have the recipe with me: they got deleted from the computer. xp I know how to make those... So easy and good... I make the chicken enchiladas.
Package of chicken Package of mozzarella cheese to put on top (or whatever kind you like) 2-3 Cans of Enchilada Sauce (one will be used to pour on the top) Large onion Can of Black Olives (optional) Flour tortillas Baking dish
Cut up the chicken into small bite-sized strips, and cut up the onion. Add the chicken and onion to a pan, and cook thoroughly. Drain the chicken to get rid of the grease and fat. Next, pour in the 2 cans of Enchilada Sauce on top of the chicken and onions. Simmer the 3 ingredients until it becomes a little thick.
Now, you want to take a flour tortilla, and put about 2-3 scoops of the chicken in it. Roll up the tortilla, and then put it in the baking dish. Repeat this as many times desired, or until the entire baking dish is full.
Once the baking dish is full, top off with the black olives, cheese, and the 1 extra can of Enchilada Sauce. Then, cover the baking dish with a piece of aluminum foil big enough to cover the whole thing. Next, pre-heat the oven to 325 or so, and then add the baking dish. You want to bake the enchiladas until the cheese is all melted.
You're all done! Hope you enjoy my yummy chicken enchiladas!

Here's another dish that I love, and find myself making a lot:
Easy Mexican Dip!
What you'll need:
2 Cans of Refried Beans 16 Ounce Container of Sour Cream Package of Mild Taco Seasoning 16 Ounce Can of Mild Salsa (any kind you like) 3 Small Cans of Black Olives 1 Cup of Diced Scallions 16 Ounce Package of Mozzarella Cheese (or any kind of cheese you prefer) 9x9" Baking dish
Mix 1 tablespoon of the taco seasoning with the container of sour cream. Then, in the baking dish, layer the bottom of the dish with about a half-inch of refried beans, the sour cream with the taco seasoning, the salsa, black olives (make sure you drain them out!), scallions, and finally the cheese. Repeat these steps until the baking dish is full. Cover with foil. Bake at 325 for about 45 minutes, or until the cheese is melted.
The way I eat this is with a big bag of Tostitos.... yum...
Try it out, and I hope you enjoy it!
