If you were going to drop letters, then you'd be looking for the contraction "would've". I think people started typing "would of" instead of "would've" because they pronounce it like "would of", but you spell it "would've". It's the same amount of keystrokes so there isn't really any reason to use the wrong term.

{Sorry if I sound like an a**, but people using "would of" is one of my pet peeves.}
