SCOTCH EGGS
suitable for brunch or dinner
Ingredients
* 1 lb ground lean pork sausage (i like the Jimmy Dean brand; get it all in one roll, not in separate patties_
* 1/2 teaspoon salt
* 1 teaspoon rubbed sage
* 1/2 teaspoon pepper
* 1/2 teaspoon thyme
(or i just substitute a good healthy dash of worcestershire sauce for the dry ingredients)
* 1/8 teaspoon clove
* 4 or 5 SMALL eggs, soft boiled (not too large)
* flour
* 1 large egg
* 2 cups fine dry breadcrumbs
Directions

Mix the sausage thoroughly with the seasonings and divide into four equal portions.

Have the four eggs soft boiled, for about 2 minutes. )or see my soft boiled egg recipe right here in this topic! *.~)

Peel them, dip them in water and coat them gently in flour.

Wrap each egg evenly in a portion of sausage, being sure they are covered completely.

Beat the remaining egg.

Dip each egg in the beaten egg then coat thoroughly in breadcrumbs.

Chill for one half hour.

Bake until golden brown on a cookie sheet at 400°F; about 25 minutes.
