Here's some potluck recipes!

Toasted Walnut Pesto Dip

1 cup toasted walnuts*
8 oz fresh Parmesan cheese, block or shredded
1 cup curly parsley leaves, loosely packed
3 Tbsp cilantro leaves
1 Tbsp fresh or 1 tsp dried thyme
2 cloves garlic, crushed
1/2 cup olive oil
Salt and pepper to taste

In a food processor, pulse walnuts until fine and remove to bowl. Repeat with Parmesan.
Altogether, pulse parsley, cilantro, thyme and garlic until fine. Add in walnuts and Parmesan. While blending, drizzle with olive oil until it forms a paste. Salt and pepper to taste. Serve with hearty crackers, pita chips or crostini.

*To toast walnuts, spread on parchment covered baking sheet and bake at 350 for 5-10 minutes, stirring occasionally until fragrant.

Broccoli Salad

2 large bunches raw broccoli, cut into florets
1 can chickpeas, drained and rinsed
1 lb. bacon, cooked and crumbled
2 c. grated Cheddar cheese
1/2 sweet onion, finely chopped
1/2 c. sugar
2 tbsp. wine vinegar
1 c. mayonnaise

Mix mayonnaise, sugar and vinegar together. Add chickpeas, onion, bacon and cheese. Pour over broccoli in 9 x 13 pan. Stir until broccoli is lightly coated. Chill a few hours.

Cheese Ball


1 8oz pkg shredded Cheddar Cheese Blend
1 8oz pkg shredded Italian Cheese Blend, ¼ cup set aside
1 8oz tub Chive and Onion Cream Cheese, softened
1 8oz pkg Cream Cheese, softened
1 Tbsp. Worcestershire Sauce
1/8 tsp onion and garlic powder, mixed
¼ cup pecan pieces


Toss dry cheeses with onion/garlic powder and pecans. Fold in cream cheeses and a couple shakes of Worcestershire until blended. Mold into a sphere, serve with hearty crackers.

Watergate Salad

1 pkg pistachio pudding mix
1 20oz can crushed pineapple
½ bag of mini marshmallows
1 tub Cool Whip, defrosted
¼ cup chopped pecans

In a large bowl, mix together pudding mix and pineapple, including the juice in the can. Add in Cool Whip, stir until combined, and then fold in marshmallows and nuts. Refrigerate at least 1 hour to overnight.
