9/12/10 Cupcakes!
I had the weirdest dream last night, and it had Edward Elric in it again. (WHY do I dream of him so often?! I don’t even watch FMA that much!) We were on a train expedition for some odd reason and we stopped off at an abandoned theme park to forage… (This was near the end of my dream where I woke up.) Ed scared another random person not in our expedition crew with a talking jack-o-lantern and they ran away, and then it turned out that the themepark was inhabited by zombies, because of the satanic inscription on the roller coaster. Ed got abducted by zombie schoolgirls (Tyyyypical.) and taken to school, and I got abducted by zombie preschoolers and their teacher and taken to be sacrificed by them to revive some girl who died…. So today I woke up around 8, surprisingly. There was a cat fight going on outside (Probably the same two cats I heard over a week ago.) and the squirrels and neighbor’s kids (******** loud.) woke me up. I decided to make cupcakes again (Ultimate Chocolate Cupcakes with powdered sugar on top. They’re really good and have chunks of dark chocolate in them. They’re good because it’s not milk chocolate, and dark chocolate reduces risk of heart attack. I made them last week sometime with help.) for dessert tonight, because just oreos are so boring. Here’s the recipe!
Ultimate Chocolate Cupcakes
1 cup all-purpose flour (About 4.5 ounces.)
1/3 cup UNSWEETENED cocoa
1 TEASPOON baking soda (No more, no less. Use too much and your cupcakes will taste like soap.
1/8 teaspoon salt (No more, no less. VERY small amount.)
2/3 cup granulated sugar
¼ cup butter, softened (About a half a stick of butter, if you get the brand I do.)
½ cup egg substitute (1 egg beaten well and poured into the measuring up then watered down will do. It worked because we didn’t have egg substitute today.)
1 TEASPOON vanilla
½ cup 1% low-fat buttermilk (We never have buttermilk. Just put ½ cup milk into a measuring cup and pour in ½ TABLESPOON of white vinegar [or lemon juice, if you don’t have it] into a measuring cup, let sit for 5 minutes. There should be chunks in it by then, but that’s the point.)
1 1/4 ounces dark (70 percent cocoa) chocolate, finely chopped (Dark chocolate is fine. Do NOT use chocolate chips, unless you intend to chop them up using the food processor like I did. [Well then again I just used ghiradelli’s dark chocolate, but that’s all good.])
2 TABLESPOONS powdered sugar.

Preparation
Preheat oven to 350 degrees

Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, cocoa, baking soda, and salt, stir with a whisk. (DO NOT put in sugar. I made this mistake and it still turned out nice, but chances are you ARE NOT a baking master. SO DON’T DO IT!) Place granulated sugar and butter into a large bow, beat with a mixer at medium speed until well combined (About 3 minutes.) Add egg substitute and vanilla, beating well. Add flour mixture and buttermilk mixture alternatively to sugar mixture while mixing, beginning and ending with flour mixture (This means you start with the flour, add buttermilk, add flour, more buttermilk, and then end with flour, dumbass.) Fold in food processed (Chopped) dark chocolate. (Don’t stir, FOLD.) Spoon batter into 12 muffin cups lined with muffin cup liners. Bake at 350 degrees for 18 minutes until cake springs back when touched lightly in center or until wooden pick inserted in center comes out clean. (I had to bake for 18 minutes, check with a toothpick, and then bake for an additional two minutes. Do what works for you.) Remove from pan, cool completely on a wire rack. Sprinkle with powdered sugar. (The powdered sugar just disappeared on me after a day, but oh well.)
